War, Freezer meals, food is important as breathing, march 9, 2022

For those waiting for a video, you will have to wait a while longer. We did the filming but I can’t figure out how to edit it on Jim’s computer and mine no longer has the software. So when he gets back we, will put it together.

I spend time watching the latest on the war in Ukraine. It breaks my heart. I am a helper and I can’t help and we just watch. When Covid 19 came into play we were all in disbelief that something like that could change our lives all over the world but it did and it did it quickly. Now war and it happened quickly or at least it actually started 2 weeks ago. As a 5th grader I lived in California. In my class we got pen pals from New Hampshire. I remember that we wrote back and forth about Nikita Khrushchev. It was during the cold war. This war is not cold anymore. It is hot and deadly.

I planned to prepare meals for the freezer and finally got to them today. I make two lasagna and one chicken enchilada dish. I also took three of the bacon slabs that I have been turning every day in the refrigerator and after removing them from their bags for 24 hours of rest. I put them in the oven on 200 degrees for 4 hours. I cut a little of each one and cooked it. They worked. They are very good. It is my first time to successfully make bacon. Tomorrow I will cut them and freeze in small containers.

Nutritional Education

I completed my writing of my Webinar presentation today. Eating is one of the most important things we can do to take care of our bodies. It is right up there with breathing. For years, I was in denial that it had anything to do with our health, but that changed almost 14 years ago and now I know that food has everything to do with our health.  Tomorrow I will be better than today. I will drink more water. I will eat more vegetables. Set tiny goals and you can improve your health.
