2 teaspoons olive oil
1 lb of sage sausage rolled into small meat balls
4 medium Granny smith apples or another tart variety
1 tablespoon butter or Ghee
1/4 teaspoon pepper
1/4 teaspoon dried thyme
2 Tablespoons maple syrup
Heat 2 teaspoons of the oil in large cast iron skillet over medium heat. Form the sausage into small meat balls and cook, turning often, until lightly browned, about 6 minutes. Remove from pan. Add 1 tablespoon butter or Ghee to the skillet. Add sliced apple, pepper, and thyme and drizzle with syrup. Cook, tossing often, until tender, 12 to 14 minutes. Return sausage to pan and toss with apple to heat through and serve.
